Everyone in Spain calls Yong Ping Zhang Julio. His goal is to bring the rich and varied philosophy of Chinese cuisine to Europe. And he has managed this with his Soy Kitchen restaurant in Madrid, where he uses local produce to promote the values of Chinese cuisine. 

Sichuan-style pork ribs

Ingredients

  • Sichuan pepper
  • Bean paste
  • Noodle sauce
  • Pork ribs
  • Cumin
  • Fresh onions
  • Garlic
  • Ginger
  • Oranges
  • Salt
  • Sugar
  • Sunflower oil
  • Rice wine

Recipe

  1. Clean the rib.
  2. In a separate bowl, put the spring onion, ginger, Sichuan pepper, garlic, bay leaf, cumin and peeled oranges. Add salt, sugar, soya, sunflower oil and rice wine and sauté in the wok until medium cooked.
  3. Spread the sautéed mixture over the rib, making the flavours stick well. Cover with aluminium foil and place in the oven at 180º for 2 hours.
  4. Blend the vegetables with the juices, reduce and make the sauce.
  5. To finish, put the rib with the sauce in the oven for 5 minutes at 180º.

Observations:

Accompany with a glass of red wine or a beer to enjoy an exquisite delicacy.
